    Air Fryer Haddock

          PREP TIME 10 minutes;

          COOK TIME 10 minutes;

          SERVES 4


          INGREDIENTS


        • 2 pounds haddock filets skinless
        • 1 tablespoon olive oil
        • 1 teaspoon Italian seasoning
        • ½ teaspoon garlic powder
        • ½ teaspoon paprika
        • ½ teaspoon kosher salt
        • ¼ teaspoon black pepper
        • Lemon wedges for serving

          INSTRUCTIONS


        1. Pat fish dry with paper towels.
        2. Drizzle fillets with oil, then sprinkle them on the fleshy sides liberally with the seasonings.
        3. Place the filets in a single layer in the air fryer without overcrowding.
        4. Air fry at 350 degrees F for 8-12 mins, until fully cooked and opaque. 
        5. Serve as desired.

          Serve with a salad, or fresh steamed veggies for a healthy meal!

    Baked Haddock

          Serves 4

          Serving size: 8 oz

          Time: 30 minutes cooking, 5 minutes prep


        This is the original baked haddock recipe that
        has been in Capt. Dave Marciano’s family for
        generations. Just like Grammy Angie used to
        make it and the whole family loved it. Dave
        wants to share with you all this simple, hearty
        dish.


          Ingredients: 

        • Haddock fillets 2 pounds
        • Grated parmesan cheese 1 cups
        • Ritz crackers 1 sleeve or about 24
        • Butter 1 stick or 1/2 cup
        • Salt ¼ tsp or to taste
        • Pepper ¼ tsp or to taste
        • (Crushed Garlic if you wish this variation but not too much!)

          Cooking Instructions:

          Time: 30 minutes cooking, 5 minutes prep


        1. Grease a 9 x 12-inch baking pan.
        2. Place haddock fillets in the pan skin down if unskinned (which is common with haddock). Try to keep even thickness throughout the pan to promote even cooking. You may have to fold under some of the thinner pieces at the ends of the fillet.
        3. Sprinkle the grated cheese on the top of the haddock.
        4. Crush the Ritz crackers with your hands or you can place in a gallon ziplock bag and use a rolling pin for finer crumbs. Sprinkle the crushed Ritz crackers on top of the haddock and cheese.
        5. Cut up the stick of butter into about ½-inch thick pieces and place evenly around the top of the haddock, cheese, and crackers.
        6. If you wish, sprinkle some crushed garlic over the top, but not too much as you don’t want to overpower the delicate white meat.
        7. Bake at 350 degrees on the center oven rack until cooked through or approximately 25 minutes for one fillet thickness of pan. Cook longer if thicker fillets and more like a casserole. Cook until the fish is even white color all the way through and no longer opaque.
        8. When done, the skin may come off when serving which is fine, or it will flake right off with a fork.

        This recipe can also be made in a foil packet on the grill, along with your summer barbequed burgers and dogs. Spray the inside of the foil if you desire with cooking spray. This recipe can also be used for tuna, salmon, shark, and striped bass.

    Grilled Haddock

          Grilled Haddock with Lemon Cream Sauce


          Ingredients:


        • 1 lb of Fresh Haddock 1 tsp Olive Oil 1 Large Lemon
        • 1 tsp Salt
        • 1 tsp Pepper
        • 1 tsp Dill Weed

          For the Sauce:


        • 1 tsp Olive Oil
        • 1/4 of Medium White Onion
        • 1/4 cup Heavy Cream
        • 1 tbsp Butter
        • 1 Large Lemon
        • 1 tbsp Grated Parmesan Cheese

          Directions:


        1. Prepare the ingredients. Mince the Onion, Zest, and Juice one Lemon. Slice the other Lemon. If using fresh Dill chop it up.
        2. Rinse and pat the haddock dry.
        3. Lay out a couple of sheets of tinfoil, one for each fillet. Lightly coat with Olive Oil. Place 2 to 3 slices of lemons down the center of the foil.
        4. Season each fillet with salt and pepper. Then place fillets on top of sliced lemons. Wrap each fillet so that it's completely sealed with the seam facing upwards. Grill over medium heat for approximately 8-10 minutes depending on the thickness of the fillets.
        5. While the fish is grilling start the cream sauce. Use a small sauce pan add the olive oil and set to medium-high heat. Add the minced onion and saute for 2-3 minutes until tender. Reduce heat to low and add the cream and butter until melted. Then add lemon zest and juice and continue to cook for 2 minutes. Finally, add the parmesan cheese and stir until melted. Remove from heat and season with salt and pepper to taste.
        6. Spoon the sauce over cooked haddock and enjoy!
