Broiled Boston Mackerel

INGREDIENTS


  • 2 pounds Boston Mackerel, fileted, or cleaned and split for broiling
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons butter
  • 2 tablespoons lemon juice
  • 2 tablespoons fresh cut parsley
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Dash paprika
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat broiler to 450 degrees
  2. Place fish, skin side down, on a greased broiler pan
  3. Brush both sides of fish with the olive oil
  4. Broil 5 minutes, turn over and broil 4 more minutes
  5. While the fish is broiling, melt the butter on medium low heat in a small saucepan.
  6. Add salt, pepper, lemon juice, garlic powder, onion powder and parsley to the pan of melted butter.
  7. When fish done broiling, remove to a platter ad pour the butter sauce over the fish.
  8. Sprinkle with paprika and then serve warm.
  9. Enjoy!
