Garlic Calamari & Lime

Calamari with Garlic and Lime

This easy one pan recipe is a fresh, light entrée! 

Serves 4


INGREDIENTS

  • Extra Virgin Olive Oil
  • butter
  • 15 garlic cloves, roughly chopped
  • 2 lb calamari, sliced into rings
  • 4 tbsp white wine
  • Juice of 2 limes
  • Salt and pepper
  • Pinch cayenne pepper, optional
  • 4 tbsp chopped fresh dill


Instructions

1. On medium-high heat, in large cast iron skillet, heat 1/3 cup of olive oil and 2 tbsp butter. Add the garlic, and saute briefly.

2. Rinse the calamari and pat dry and then add to the pan, cook for 1 to 2 minutes (calamari will release some liquid.) Add white wine and lime juice. Cook briefly another minute at most to heat up the sauce, and do not overcook. Season with salt and pepper. If you like a little spice, add a pinch of cayenne.


Stir in the fresh dill and serve with linguine, or polenta, or the starch of your choice.
