Oven-Roasted Jonah Crab with Garlic and Butter


Enjoy the sweet, tasty Jonah crab roasted with perfection! This fabulous recipe includes lots of garlic – a fusion of flavors all combined! It is incredibly good! We want to share with you how easy it is to cook with Jonah crab

INGREDIENTS


  • 4 Jonah Crab
  • 1 cup butter
  • 4 tablespoons Extra Virgin Olive Oil
  • 10 cloves garlic finely chopped
  • 1/2 cup white wine
  • 2 lemons sliced
  • salt & pepper to taste
  • fresh parsley for garnish 



Instructions


Clean Jonah Crab:


  1. Before cleaning crab you may want to boil it in salted water - bring a big pot of salted water to a boil, add crab bring it to a boil again, and cook for 5 minutes on medium/high heat.
  2. Right after 5 minutes of boiling, place crab into icy cold water to stop the cooking process.
  3. Flip crab on its back and pull away the apron – the  triangle shape part - and toss it away.
  4. Take the top shell of the crab & pull it up away from the body and set aside. You can use a regular spoon to help pull it away. Remove the gills/lungs & the mouth pieces. They should come off easily.
  5. After removing crab's insides, rinse the crab body & the top shell until squeaky clean.

 

Make Garlic Butter Sauce:


  1. In a skillet add 1/2 cup of butter, 3 tablespoons of olive oil and 10 cloves of chopped garlic. Cook on medium heat for 3 minutes, pour in 1/2 cup of white wine. Simmer for 1 minute and remove from the heat. Set aside. 

 

Prepare the Crab and sauce for baking:


  1. Preheat the oven to 350F.
  2. Place clean crab on top of lemon slices, pour garlic butter sauce over the crab, season with salt & pepper.
  3. Bake for 15-20 minutes. While the crab is baking place the crab's top shell (shell only – all the insides have been tossed) back into the pot and boil for 10 more minutes.
  4. Garnish the pan of baked crab with chopped parsley. Place the top shell of the crab on top of the crab. Serve with crackers.
