HOMEMADE WHITE GRAVY

(A great companion to Clam Pie)

Serves 4

A traditional white, creamy gravy that pairs well with our clam pie, as well as leftover turkey or biscuits. It has a great flavor and is meat free and vegetarian. Easy to double if more is needed

Ingredients:

  • Butter... 1/2 stick
  • Flour... 2 Tablespoons
  • Milk... 1 cup
  • Salt... ¼ tsp or to taste
  • Pepper... ¼ tsp or to taste

Cooking Instructions:

Time: 10 minutes cooking

  1. In a 6 quart pot on medium-low heat, melt the butter. Add salt and pepper. Cook for 3-4 minutes until butter is melted.
  2. Add the flour and whisk it together (preparing the roux) with the butter until the flour lumps are gone and the flour and butter are well mixed. This mixture will be thick and tend to stick to the bottom so be careful not to burn the ingredients in this step. Stir constantly – about 2-3 minutes.
  3. Now slowly whisk the milk into the roux until becomes a smooth sauce and any flour lumps have disappeared – about 5-6 minutes. The mix will start to thicken as you whisk it.
  4. Add additional salt and pepper if needed. Serve immediately.
  5. If you enjoy a little spice, add some cracked black pepper.

This can be made Gluten-free using Gluten Free Flour.
